Apfel Hof

This weekend we went to Apfel Hof with New City Wien.   It was a beautiful, crisp fall day.  It was fun being out in the country.  Bernhard, the farmer, started the day by talking about potatoes and  their origin and what all we do with them.  Then we went to his small field that he has behind his house and barn.  He got on his tractor and prepared the soil for us to harvest potatoes.  After washing the potatoes and wrapping them in foil to bake, we hopped on the wagon behind the tractor and went to the ghost keller (aka the potato cellar).  Then we headed over the apple orchard, where we got to pick a few bags of apples and pears.  We learned all about apples and potatoes all along the way.  When we got back, the men started grilling and the farmer made freshly pressed apple juice, which was SO good!!  There was also a pumpkin patch and we got to pick out some.  It was a wonderful day and we came back with bag...

our countries

Currently, our school has 242 students enrolled.  It's the most the school has ever had in their 25 years of being a school!  It's truly amazing how God has blessed us this year.  We are bursting at the seams.  We have students from all of these countries: Someone calculated that we have 1/4 of the world's nations represented at our school! Click on it to see a larger version. I have 20 students this year.  Many of these students are beginners, which are some of the most challenging classes, but also classes where the most growth can be seen.  You'll see some pictures of my students below.  Three aren't in the pictures, because they came after I took these.  Guess you'll have to wait to see them.  Second through fifth grade are split up into different English leveled classes, which is why I have two pictures of some of the same grades. P lease pray for me to have creativity in teaching them.  Pray for these students to learn ...

fall things

Fall has been really wonderful here.  We've had amazing weather - lots of sun and warm afternoons.  The mornings and evenings can be chilly, but we haven't had hardly any rain, which has been really nice.   Since fall is here, I've noticed more and more recipes with pumpkin.  You can't buy pumpkin puree here, so one afternoon I decided to make my own.  I got some great advice from two friends (Thanks, Tricia and Tina ).  It was super easy and now I have pumpkin to bake with!!  So here's what I did: I bought already quartered pieces of pumpkin and spooned out the seeds and stringy pulp.  Then I baked it, the cut side down on the sheet, for about an hour (until tender).   I scooped out the pumpkin flesh, which took quite some time and was a bit hot.  After that I pureed it with my food processor.  I placed a paper towel on a colander and let it drain overnight.  The next day, I measured out 1/4 cups and put ...
