fall things

Fall has been really wonderful here.  We've had amazing weather - lots of sun and warm afternoons.  The mornings and evenings can be chilly, but we haven't had hardly any rain, which has been really nice.

Since fall is here, I've noticed more and more recipes with pumpkin.  You can't buy pumpkin puree here, so one afternoon I decided to make my own.  I got some great advice from two friends (Thanks, Tricia and Tina).  It was super easy and now I have pumpkin to bake with!!

So here's what I did:
I bought already quartered pieces of pumpkin and spooned out the seeds and stringy pulp.  Then I baked it, the cut side down on the sheet, for about an hour (until tender).   I scooped out the pumpkin flesh, which took quite some time and was a bit hot.  After that I pureed it with my food processor.  I placed a paper towel on a colander and let it drain overnight.  The next day, I measured out 1/4 cups and put them in a muffin tin and stuck it in the freezer.
After it was frozen, I popped them out and stuck them in a ziploc to use whenever I need them!!
I am excited to know how to do this!  Now I can make things that call for pumpkin puree!  Thanks so much, Tricia and Tina!!!

Felix picked up some apples from his parents garden a while back, which were quickly turning rotten.  Saturday I finally had time to make some yummy applesauce.  Felix said it's too sweet and cinnamony.  But I think it's just right! ;)

What kind of fall things have you been making?

Do you have any great pumpkin recipes that I need to try?  If you do, send 'em my way!!

  1. That's a good idea for the pumpkin puree. I haven't thought of that! I always wanted to bake pumpkin pie, now I'll be able to do that! Thanks, Les! :)

About the applesauce... I don't think it could be too cinnamony. But Felix may not like cinnamon as I do! :)) What are you doing with the sauce? We don't have that either. :S

Welcoming strangers into my home

For 16 weeks now, we have had a young refugee couple from Syria living with us. They have been married a little over a year and for the majority of that time have been separated from each other, since he made the journey to Austria alone and got everything in order so that she could come legally.  Let me backtrack a bit and tell you how it all started. As the refugee crisis really started to explode here, facebook was buzzing with articles, videos, pictures, etc. of the situation. I read a lot. I saw a lot. I was moved. I was troubled. But what could I do? I had a three year old and one year old at home.  ... I could teach some German. But when?   ... I could donate clothes and other items that were needed. But that didn't seem like enough. ... I could give money. But I wanted something more tangible.  I would put my youngest to bed and during those days, she needed lots of TLC in order to get to sleep. I kept thinking about the refugees and how t...

6. chair

Z is loving her new "chair"- no more laying around in the buggy for this little one. {unless of course she's napping} She loves looking around and taking it all in. I love being able to see her better this way and laugh together. Just today I got stopped at the grocery store by a woman that asked me if I knew how adoringly my baby was looking at me.  It was a strange, yet funny and sweet, experience...very un-Austrian.
