a bread recipe

Oops ... somehow this post did not upload.  So here we go a bit later than expected. :) 

Earlier this week, a work colleague gave me a slice of her homemade bread.  It was so tasty that I asked her for the recipe and then made it on Saturday.  It's a super easy one (once you find all the healthy ingredients, that took me a while, since things aren't always that easy to find over here).  It doesn't have to rise ... the annoying part was scratching the dough out of the mixing bowl and into a loaf pan.  Between two meals and a few snacks here and there, Felix and I ate over half of it in two days!  I think adding honey would make it really tasty, too.  It reminded me of the Honey Oat bread that Subway has, which I LOVE!  I may have to try that sometime...any ideas on how much honey I could add?

Irish Soda Bread

3 1/2 cups whole meal flour
4 tbsp oats
3 tbspwheat bran (or wheat germ)
1 tbsp flaxseed (I actually left this out)
2 tbsp brown sugar (or less, that's what my husband would prefer!)
1 tsp baking soda
1/2 tsp salt
A little less than 2 cups buttermilk (you can make butter milk by putting 2 tbsp of apple vinegar with a little less than 2 cups of milk together)

Mix the dry ingredients together, add the milk, bake at 400F/200C for about 40 minutes.

  2. ah! i think i figured out why my posts weren't being posted ... the screen i was taken to was small, so i didn't see that it asked me there to sign in to gmail, even though i am always signed in and in the past i didn't have to ... this time, i was more careful and read what it said under the box i had checked for google account ... strange ... but i think it's gonna work now!!

Day 18

I've been doing the 30 day praise challenge, that my friend introduced on her blog . It has been really good focusing on all the different reasons we should praise the Lord. Today, day 18, couldn't have come at a better time (well, it would have worked for several other days, but today especially). the little things

My day is filled with doing little things... wiping noses changing diapers fixing hair brushing teeth doing dishes straightening up books and toys that land everywhere tying shoelaces doing load upon load of laundry folding said laundry putting on hats making sandwiches  putting littles down for a nap and on  and on and on. Sometimes I get tired of the mundane. I get tired of life right now being so .... regular ... every day seems so the same. I was talking to my sister the other day about it and I said, I wouldn't want to change it, but yet sometimes the mundane gets to me. I get restless. I feel like the hamster running round and round the wheel and it's always the same. {just different friends and playdates} Today over breakfast while feeding the baby, I listened to a podcast {ahem, part of one }.
