This is my last week of work.  In Austria, you are only allowed to work up until 8 weeks prior to your due date.  Friday will be my last day teaching for a long time.  It's so strange to think that, but I'm also really excited about this next journey that God has planned for our family.  I can't imagine what life will be like, but I can't wait to experience it!  I'll be back to school for a few more events though and definitely for the last day of school to sign yearbooks and say the real goodbyes. Baby Girl is now the size of a squash.  She's growing and growing and I'm starting to feel quite large.  It's funny how I think pregnant women are so cute and I just love their bellies, but now having one, I just feel huge...I love feeling her move around though.  I wish I could peek inside and see exactly what's she's doing.  My mom says she wished she had a clear wrap tummy to see what's happening...I agree.  I often wonder if she's kickin...

Taco Pasta

It's so great to be feeling well enough to cook and plan meals again and to blog about them!  Tonight I decided to try another pinterest recipe and it was a success!  It didn't take too long, was easy to make and was quite tasty.   Taco Pasta 1 pound ground beef or turkey 8-12 ounces medium pasta shells or other small dry pasta shapes 1 small onion, chopped (about 1 cup) 1 clove garlic, minced 1 (14 oz.) can diced tomatoes with mild green chilies, drained (if making this for kids you might want to use just plain diced tomatoes) 1 packet (4 tablespoons) taco seasoning 3 ounces cream cheese 1/2 cup sour cream 1/4 cup chopped cilantro Salt and pepper Bring a large pot of water to boil. Cook pasta according to the package directions. Drain, reserving 1/2 cup of pasta water. Set aside. Meanwhile, in a large skillet or sauté pan, cook the ground meat over medium-high heat until no longer pink. A few minutes before the meat is cooked through, a...

a bread recipe

Oops ... somehow this post did not upload.  So here we go a bit later than expected. :)  Earlier this week, a work colleague gave me a slice of her homemade bread.  It was so tasty that I asked her for the recipe and then made it on Saturday.  It's a super easy one (once you find all the healthy ingredients, that took me a while, since things aren't always that easy to find over here).  It doesn't have to rise ... the annoying part was scratching the dough out of the mixing bowl and into a loaf pan.  Between two meals and a few snacks here and there, Felix and I ate over half of it in two days!  I think adding honey would make it really tasty, too.  It reminded me of the Honey Oat bread that Subway has, which I LOVE!  I may have to try that sometime...any ideas on how much honey I could add? Irish Soda Bread 3 1/2 cups whole meal flour 4 tbsp oats 3 tbspwheat bran (or wheat germ) 1 tbsp flaxseed (I actually left this out) 2 tb...

28 Week Bumpdate

...28 Weeks is here... ...Baby Ring is kicking up a storm and making her presence known... ...we can't believe she'll be here in just a few months!!! Size of baby:   The size of an eggplant! About 2.5lbs... :) Growing, Growing! (as you may have noticed I deleted the baby ticker at the top, because it hasn't been updating properly...just an fyi) Symptoms:  Heartburn, many bathroom stops, hungry every few hours. Cravings:  Still loving fresh fruits and vegetables.  Grapes are a fav at the moment.   Something you miss:  Being able to sleep through the night without pit stops and bending over without any limitations. :)   Milestones:  We now have a crib and changing table in the nursery!  YAH!  We need to decide on colors and then paint.  After that, the closet can be put together (over here you don't have walk-in closets that are there, so you have buy closets).  I'm looking forward to getting that up,...

Happy Easter

What a joyous weekend we have to celebrate Christ's resurrection and the victory over sin!  I am so thankful for Christ's sacrifice and love for me. " Surely he has borne our griefs      and carried our sorrows; yet we esteemed him stricken,      smitten by God, and afflicted. But he was pierced for our transgressions;      he was crushed for our iniquities; upon him was the chastisement that brought us peace,      and with his wounds we are healed. " ~ Isaiah 53:4-5 "A mong whom we all once lived in the passions of our flesh, carrying out the desires of the body and the mind, and were by nature children of wrath, like the rest of mankind.   But God, being rich in mercy, because of the great love with which he loved us,   even when we were dead in our trespasses, made us alive together with Christ— by grace you have been saved." ~ Ephesians 2:3-5 How wonderf...
